Jose is the co-founder of ChipMonk Baking, a keto and gluten-free bakery dedicated to helping people mindfully satisfy their sweet tooth. Jose has a passion for health and wellness and studied both Human Biology and Exercise Science at the University of Texas at Austin with the goal of going into medicine. However, he decided to pursue preventive health through food and exercise as he felt that more people could be helped.

I take a 20-minute break and meditate using headspace (app) to calm my mind and regain clarity.

Low carb/sugar and keto diets are taking off because they're not a fad, they're a sustainable and healthy way of life. Many people are starting to realize the impact food has on their health and are all gradually moving towards better food choices.
In the food industry, it's mind baffling how many companies make false claims using catchy marketing. Just because something is low fat or vegan, doesn't mean it's good for you. Sugar is one of the worst things you can eat in excess and people don't know to look for it.
Coconut Chia Pudding. I add fresh fruits as well.
Learning to meditate has been the most beneficial investment of time because it's helped out in all aspects of life. It's especially effective in learning to live in the moment and helped reduce stress and anxiety.
Being an F-1 driver.
I'm a low carb dieter to manage my type two diabetes. Most of my calories come from fats like avocados, nuts/seeds, animal fats, and cold-pressed oils. I eat low sugar fruits like berries and most veggies but stay away from the starchy ones. I call it the squirrel diet on account of the outrageous amount of nuts and seeds I eat.
It depends on how it's cooked but it's tough to beat good brussel sprouts. A close second is asparagus.
A black coffee. I skip breakfast every day because I practice intermittent fasting for hrs a day. My eating window starts at lunch and ends at dinner.
