  • During this time, prepare the courgetti and the carrots spaghetti. Slice the carrot into long, thin strips after peeling using a peeler (or use a julienne peeler or spiralizer if you have one). Keep the skin on the courgette, but remove the ends.
  • Another big frying pan, this time without oil, should be heated up. Add 1 tsp of oil to the pan and bring it to a boil. To soften the veggie spaghetti, cook it for a few minutes—salt and pepper to taste with sea salt. Allow the pine nuts to cool once they have been toasted for 2 to 3 minutes.
  • Serve the beef ragu on top of the spaghetti with carrots and courgetti. Pine nuts and the rest of the parsley should be sprinkled on top.

  • While this is happening, cut the courgetti into ribbons and place them in a bowl. Slice the ribbons into long, thin, slender strips (or use a julienne peeler or spiralizer if you have one).
  • Toast the pine nuts for a minute, then remove and store them in an airtight container. Medium-high heat in a dry frying pan is ideal for this task. Add half a tablespoon of oil to the pan and stir in the courgetti. One minute, or until the courgetti is just starting to soften, is all that is required.
  • Add the lentils to the bolognese and mix them in. Toasted pine nuts should be sprinkled over the bolognese before serving.
