How to make vegan pasta

I am so excited about this vegan pasta recipe by Bianca Zapatka! This recipe is 25 minutes, not included the ½ hour for the dough to cool. In the meantime, you can watch your favourite tv show with a glass of wine. By the time your show is done, your pasta is ready to be cooked!

Vegan Pasta Recipe
Here is the recipe for vegan pasta from scratch that is so easy and fun to make with friends. You don’t need a pasta machine, but you can bring it out if you like. For those who do not have a pasta machine, you can use a rolling pin.
Other than that, you will only need a knife, a pot, and a cleaning working surface. Now let’s get into the ingredients!
Vegan Pasta Ingredients
- 150 grams of all-purpose flour (gluten-free and spelt flour work also)
- 150 grams of semolina flour
- ½ tsp salt
- 150 ml of water
- 2tsp olive oil
- 80grams of fresh or frozen spinach (optional for spinach pasta)
Instructions
- In a bowl, mix the flour, semolina, and salt. Create a well to pour in the water and olive oil. Mix everything.
- Transfer to a clean working surface. Knead the dough until smooth, which can be about 8-10 minutes. (If the dough is too wet, then you can add more flour – if the dough is too dry, then add water)
- Form the dough into a ball and wrap it in cling foil. Put it in the fridge and let it chill for ½ hour.
- After it has chilled, take it out and cut it into two pieces.
- Place one piece on a floured surface. Roll it out until thin. (a rolling pin or pasta machine work fine)
- Dust with more flour if it gets sticky. Loosely roll it up and cut the roll so that the dough is in strips when you unroll.
- Lay the noodles loosely in several bundles. Repeat steps 5 – 7 for the next portion.
- When both portions have been cut, boil salted water in a large pot.
- Add the pasta and cook for about 3-4 minutes
- Serve with your favourite sauce!
Spinach Pasta
For spinach pasta, cook the spinach until wilted. Squeeze the spinach and blend with 150 ml of water. Instead of adding just water in step one, you can add the spinach mixture. Then follow the same steps!
How to Store Vegan Pasta
To store fresh pasta, you can place it into the fridge for up to 3 days. For dry pasta, leave it out for 24 hours until it is fully dry. When it is dry, you can store it at room temperature for up to one month in an airtight container.

Mushroom & Spinach Pasta

When your noodles are cooked, you can saute some onions and mushrooms. Add chopped garlic, soy sauce, and vegetable broth. Finally, add the spinach, and you can mix it in the pasta. This meal is just a quick 10-minute recipe that looks like a fancy dinner. If you made the spinach pasta, you could avoid adding more spinach, but it is entirely up to you!
Vegan Spaghetti Bolognease

Heat olive oil in a skillet and cook the tofu until brown. Add carrots, onions, and celery. Add the garlic later with vegetable broth, tomato paste, and tomatoes. Sit everything and season your sauce. Let it simmer for 15 – 20 minutes. Add your spaghetti, and you have a beautiful vegan spaghetti bolognese.
Creamy Mushroom Pasta

Heat oil in a pan and sautee diced onions. Then add the mushrooms until golden brown. Add vegetable broth, tamari sauce, and bean puree. Season and add roast pine nuts. Finally, add your pasta and combine it with your sauce!
Avocado Pasta

Cut the avocado and add it to a blender. Add the guacamole ingredients to the blending and blend until smooth. Combine the sauce with the pasta and top with roasted tomatoes or your topping of choice.
