- 350g self-raising flour
- 95g vegan vegetable spread
- ¼ tsp salt
- 1 tsp baking powder
- 3 tbsp caster sugar
- 150ml soy milk
- Jam of choice
Vegan Scone Recipe
- Add the flour, baking powder, salt, and sugar into a bowl and mix. Once mixed, add the vegetable spread and rub the mixture until you have fine breadcrumbs. You can also use a food processor to get the texture you want.
- Create a smooth dough by gradually stirring the milk in the flour mixture.
- Dust the surface with flour and gently roll out the dough. You want to gently roll it out until it is 2cm thick.
- Transfer the dough onto a baking tray lined with parchment. Place the tray in the fridge for 30 mins.
- After the 30 mins have past remove the dough and cut out the scones. Use a 7cm cutter to cut out the scones and place them top side down. Leave a 2cm gap between each one on a separate baking tray. Brush with milk but be sure it doesn’t drip on the sides.
- Put the scones into the freezer for 15 minutes and heat the oven to 220C.
- Remove from the freezer and bake for 15 – 20 minutes until golden brown. Serve with the jam and vegan cream of choice.
