Red? I know, right. Not the most mouth-watering colour, in my opinion. However, our recipe for beetroot pasta beets (pun intended) expectations. This lovely dish looks and sounds extraordinary. The Beet juice turns the pasta a rich pinkish-red colour. The fusion of beets, arugula, and feta cheese flavours is known for tasting utterly delicious, and we just uncovered that secret. 

This recipe is super simple to make. All the ingredients are available at any local grocer. and it. 

Before we move on to cooking instructions, let’s not forget how nutritious beetroot is. With its savoury, earthy flavour, this dish is such a wonderful option for vegans. If you have, here is a reminder.

  1. Beetroots help in reducing your blood pressure. It’s so potent that you can see changes in a matter of hours. Studies have also proved that beetroot can lower a considerable amount of systolic blood pressure, around 4-5 points.

  3. Beets are a great source of nutrients like vitamin C. They are known to boost immune systems. They also contain fibre, and potassium which enhances the performance of muscle and nerves. Likewise, It’s safe and recommendable to pregnant women as it reduces the chances of birth abnormalities.
  4. Every part of the beet is tasty as even the leaves can be steamed or blanched and eaten. The smaller leaves are added to salads. They almost taste like spinach.

This meal will be the star of your menu, and it only takes 25 minutes to make. It’s also perfect for all, whether you are vegan or flexitarian. All the ingredients are vegan-friendly. Prepping should take approximately 10 minutes, and cooking should take about 15.

Ingredients are;

  • 7 oz pasta (you can use any pasta you desire)
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 handful walnuts
  • 1  onion 
  • 1 clove garlic
  • 2 tsp sage, fresh or dried, either is fine, or you can substitute with rosemary.
  • 1 big beetroot or two small ones(precooked)
  • ½ cup feta cheese
  • 1 handful arugula or 50g of arugula.
  • 1 sliced lemon 
  • salt and pepper (Of course).
  • You can also get ½ cup of beetroot juice, but it’s not compulsory.

1.Boil your pasta according to the type of pasta you’re using and the directions on the pack.

  1. Put the walnuts in a pan and let them fry dryly over medium heat for some minutes.
  2. Chop the onions and garlic finely
  3. Set the walnuts aside and fry the onions and garlic with a little olive oil on medium heat. Keep stirring for two minutes, then add sage, salt, and pepper to season.
  4. Pour the liquid from the pack of beetroot into the pan. Remember not to use plenty. Then chop the beetroots and add to the pan.
  5. Add 1 tbsp of white vinegar to the mixture on fire.
  6. Once the pasta has cooked enough, sieve the pasta and keep half a cup of the pasta water aside.
  7. Now, pour the pasta and pasta water into the pan.
  8. If you bought the beetroot juice, now is the time to add it and mix it all. Then let all the ingredients cook together for 6 minutes.
  9. During the 6 minutes, wash and cut the arugula.
  10. Serve and dress with the arugula, feta cheese, walnuts, and lemon slices.
